Chicken Sausage & Lemon-Ricotta Filling

  • Chicken Sausage      180g

  • Scallions                      20g

  • Garlic                            4g

  • Thyme                           2g

  • Lemon Zest                    TT         

  • Ricotta                        175g

  • Fennel                         2tsp


Plum Arrabbiata

Makes roughly 1 pt

  • Red Plums                  80g Ea

  • Tomatoes, Crushed 220g

  • Scallions              10g

  • Ginger 6g

  • Chili Flakes        1Tbsp

  • Thyme                 2g

  • Sake                    2oz/ 60ml 60g

  • Black Pepper To Taste

  • Salt To Taste

In the second edition of Order In, we prepare a Chicken & Ricotta Ravioli w/ Plum Arrabbiata.

Order In is a phrase echoed around the restaurant industry as a term called out by the Chef to his team to signal in the addition of a new ticket. It is then in a synchronized orchestration that the team prepares and executes each ticket pushing out dishes to the pass, and ultimately to our guest.

But how is it, that the chef and his team create these magical dishes in which you consume? They do so by having an understanding of how food reacts with each other while knowing when and why it is they complete each task.

From there, through mise en place, proper planning, and a foundation of recipes and techniques, we grow to learn that anything is possible in food and that one shouldn't ever feel confined to the same few dishes over and over. Ask questions, reinterpret, and continue to create cause dinner does not have to be the same every night. Whether you're a chef in the industry already, or an adventurous home cook looking to upgrade your arsenal of techniques and thoughts around food, I want you to use these videos to further push your creativity of what can be done at home.
