Recipe

Cauliflower Grits:

  • Cauliflower, Riced 220g

  • Dashi 340g or 1 (1/2)C

  • Slurry 30g

    • Dashi 30g

    • Cornstarch 2 Tbsp

  • Parmesan 90g

  • Butter 10g

  • Salt To Taste

  • Black Pepper To Taste

Fermented Fresno Chili:

  • Fermented Fresno 90g

  • Brine 56g or (1/4)C

  • Dashi 56g or (1/4)C

  • Sugar 50g or 1 Tbsp

Braised Kale

  • Curly Kale 65g

  • Chicken Stock 150g or (2/3)C

  • Butter 1 Tbsp

  • Salt To Taste

  • Black Pepper To Taste


In the first edition of Order In, we prepare a cauliflower grits w/ fermented fresno sauce, braised kale & a soft cooked egg. A rift on the classic take of shrimp and grits, done in a way that introduces familiar flavors with a slightly more health-conscious base. Smokey, cheesy, rich, spicy, come dig in.

Order In is a phrase echoed around the restaurant industry as a term called out by the Chef to his team to signal in the addition of a new ticket. It is then in a synchronized orchestration that the team prepares and executes each ticket pushing out dishes to the pass, and ultimately to our guest.

But how is it, that the chef and his team create these magical dishes in which you consume? They do so by having an understanding of how food reacts with each other while knowing when and why it is they complete each task.

From there, through mise en place, proper planning, and a foundation of recipes and techniques, we grow to learn that anything is possible in food and that one shouldn't ever feel confined to the same few dishes over and over. Ask questions, reinterpret, and continue to create cause dinner does not have to be the same every night.
