Episode 4 of The Plate Up w/ Derrick. New home equals, the ability to make some new videos so follow along. Today's Dish, Salmon Poached in Aromatic Tomato Stock, Red Wine Yogurt, Dehydrated Tomato Skin, Seared Salmon, Romanesco, Fried Potatoes, Tarragon.

The mindset for this dish was for it to at first glance come across as a Salmon dish but actually eat more like a Tomato dish featuring Salmon instead of the other way around

For the Red Wine Yogurt, I mixed together, Red Wine Vinegar and Yogurt seasoned with Salt, Sugar, and Tabasco. I then thined out the Yogurt with some of the Aromatic Tomato Stock until I reached a consistency I wanted while keeping the tomato flavor nice and subtle. Reseason

For the Poached Salmon, I let it sit over night in tomato water before actually cooking it off, looking to impart more moisture and Tomato flavor into the fish before actually poaching it off in the remaining Aromatic Tomato Stock

While SautΓ©ing up the Romanesco, I deglazed my pan with some Tomato water and finished with butter adding a nice sheen

As for the Dehydrated Tomato Skin, I kept that pretty straightforward. First I concassed the Tomato’s to help easily remove the skin. I Seasoned with salt and let em sit for an half hour. Afterwards I dabbed them off with a paper towel removing whatever extra moisture was pulled out of the skin from the salt, finally finishing em off in a low and slow oven creating little crisps
