Order In | A Not So, Spaghetti & Vegballs, CCAP-CAKE Edition | Recipes & Techniques w/ Derrick Reed.

In the days of March 1st-7th, I had the honor to teach both middle school & high school students the importance of healthy eating as well as techniques to best capture their dishes.

With this video, we focused on a healthy rendition of the class spaghetti & meatballs and how to capture it with a cell phone, whiteboard, and basic light post, showing that while equipment is important, the main key is your fundamentals. How is your composition, can I see the ingredients on hand, is the image properly lit, and more.

Order In is a phrase echoed around the restaurant industry as a term called out by the Chef to his team to signal the addition of a new ticket.

It is then in a synchronized orchestration that the team prepares and executes each ticket pushing out dishes to the pass, and ultimately to our guest. But how is it, that the chef and his team create these magical dishes in which you consume?

They do so by having an understanding of how food reacts with each other while knowing when and why it is they complete each task.

From there, through mise en place, proper planning, and a foundation of recipes and techniques, we grow to learn that anything is possible in food and that one shouldn't ever feel confined to the same few dishes over and over. Ask questions, reinterpret, and continue to create because dinner, does not have to be the same every night.

Whether you're a chef in the industry already, or an adventurous home cook looking to upgrade your arsenal of techniques and thoughts around food, I want you to use these videos to further push your creativity of what can be done at home.
